St. Louis craft brewer Schlafly Beer has another new beer series ready for 2017. It’s called From The Ibex Cellar and it will spotlight six brand new beers hand- crafted in Schlafly’s own the Ibex Cellar, located beneath the historic Tap Room in downtown St. The series will launch in early 2017 with Schlafly’s Barrel-Aged Imperial Stout and continue throughout the year.
Schlafly Beer fans may already be familiar with the “Ibex” name, and for good reason. Ibex series beers have been available before, but only in very limited release, 750 ml bottles. The new Ibex Cellar series will, thankfully, enjoy much wider distribution. Schlafly Ambassador Brewer Stephen Hale says the new Ibex beers tie in perfectly with the history of the facility and spotlight the many talents of Schlafly’s brewing team.
“The project is inspired by our building and rooted in our history”, say Hale. ”The Tap Room was a printing company in its former life so that dedicated to craft inspired us. The beers showcase the talents of our brewing team as well as our new craft bottling line and oak foeders at the Tap Room.”
“From the Ibex Cellar” beers will highlight full- bodied brew that pay homage to the Ibex. Packaged in smaller bottles, these beers feature the majestic symbol, embossed in the glass, and the bottles mimic the striking architecture of the Schlafly Tap Room building. Anyone who has visited Schafly’s hospitable serving quarters will recognize the resemblance between the tap room and the packaging artwork. Each “From the Ibex Cellar” beer spends time aging in spirit barrels of different varieties before transferring upstairs to Schlafly’s new Hoof & Quill Room where they will be met by a brand new craft bottling line and two new foeder tanks, both made with Missouri white oak from Foeder Crafters, a Missouri based business. Barrel Aged Imperial Stout will kick off the new series and will be followed by Local Oak, a beer aged in the new foeders. Next in line will be Imperial Coffee Stout, Gooseberry Gose, Barrel- Aged Pumpkin Ale, and Single Malt Scottish Ale.
The “From the Ibex Cellar” beers will be available for purchase in four-packs of 11.2 ounce (330 ml) bottles with a suggested retail price of $17.99. The beers will be sold only in bottles, plus on draft exclusively in the Schlafly Tap Room and Bottleworks retail areas.
