The CANarchy Craft Brewery Collective, a craft brewing family that includes such notable favorites as Oskar Blues, Cigar City Brewing, Deep Ellum, Brewing, and others, has a new venture that was just opened. It’s called the Collaboratory, a brewery and restaurant that seeks to initiate collaboration and experimentation not just between breweries, but also with food/beer pairings and the culture that sets craft beer apart from most other industries.
Asheville, North Carolina is the site of the Collaboratory. Located at 39 N. Lexington Ave, the facility will specialize in crafting delicious, collaborative beers and equally amazing and compatible food dishes. Heading the brewery operations at the Collaboratory is none other than Wayne Wambles, a man who also happens to be the brewmaster for Cigar City Brewing. Wambles will oversee the brewing of two to four beers each week.
Leading off at the Collaboratory are nine new beers that feature contributions from such highly regarded breweries as Highland Brewing, Green Man Brewery, Hi- Wire Brewing, and others. Guests who visit in the coming days will also be treated to CANarchy beers never before served in North Carolina, like Bamburana Double Barrel- Aged Imperial Stout from Cigar City Brewing & Oskar Blues and Vines and Bines, a beer brewed in collaboration between Three Weavers Brewing & Oskar Blues.
Oskar Blues Senior Marketing Manager Aaron Baker says these opening collaborations are definitely going to be worth the effort to seek out and taste, as they are brewed by some of the finest breweries in the area.
“Collaboration beers with some of the most well-respected breweries in Western North Carolina appear on this opening tap list,” said Baker. “These breweries have pushed the boundaries of craft beer for years, and we’re honored that our tap lineup represents a once-in-a-lifetime chance to try projects from all of them in one place.”
The Collaboratory wants to present not just an amazing craft beer experience, but also an equally incredible food experience. The foods offered will be specially selected and prepared to complement the flavors present in the beer and will feature seasonal and locally-sourced ingredients. Many of the foods will have beer listed among the ingredients and Head Chef Polo Alonso believes this is the best way to create a beer/food experience that is bound to leave consumers speechless.
